谨以此论文献给我尊敬的导师以及所有关心帮助过我的老师和同学,同时特别感谢我的家人对我的理解和支持韩芳II和质构变化的研究学位论文完成日期指导教师签字答辩委员会成员签字I独创 声 明本人声明所呈交的学位论文是本人在导师指导下进行的研究工作及取得的研究成果。据我所知,除了文中特别加以标注和致谢的地方外,论文中不包含其他人已经发表或撰写过的研究成果,也不包含未获得其他教育机构的学位或证书使用过的材料。与我一同工作的同志对本研究所做的任何贡献均已在论文中作了明确的说明并表示谢意。学位论文作者签名鄞荔 签字日期知,/年岁月如日学位论文版权使用授权书●●本学位论文作者完全了解学校有关保留、使用学位论文的规定i有权保留并向国家有关部门或机构送交论文的复印件和磁盘,允许论文被查阅和借阅。本人授权学校可以将学位论文的全部或部分内容编入有关数据库进行检索,可以采用影印、缩印或扫描等复制手段保存、汇编学位论文。同时授权中国科学技术信息研究所将本学位论文收录到中国学位论文全文数据库,并通过网络向社会公众提供信息服务。学位论文作者签名 韩芳 新签字劫q签字日期如『『年5月碍日 签字日期加lf年r月咯日的研究具有较高的食疗保健作类。本文选用养殖鲈鱼1、非线性曲线拟合法在应力松弛解析过程中的应用。通过非线性曲线拟合法解析硬质火腿、软质奶酪、鱼类鲈鱼、贝类海螺四种类型食品原料应力松弛曲线,并与传统的逐次近似法解析数据进行了比较分析。结果表明非线性曲线拟合法能够实现对广义Maxwell单元模型的拟合,可得到拟合程度高,稳定可靠的分析结果,而且操作简单、快捷,适合多种食品原料的应力松弛数据解析;对于水分含量高、粘弹性结构复杂的鱼类等食品,非线性曲线拟合法与逐次近似法相比更具优越性。2、研究鲈鱼在冻藏条件下组织构造、质地剖面分析及流变学特征参数弹性模量E,应力松弛时间t,粘性模量珂,破断强度的变化,并结合鲜度指标细菌总数,K值,TⅦ.N,pH值和感官特性判断其品质变化特征。结果表明随着冻藏时间的延长,鲈鱼样品细菌总数下降,K值和TVB-N上升;组织构造. 呈现纤维间空隙增大、方向性增强、断裂崩解的趋势;弹性模量呈上升趋势,破断强度、硬度、弹性、粘聚性、咀嚼性均呈下降趋势,而应力松弛时间、粘性模量的变化则不显著;与冷藏样品相比,冻藏样品具有鲜度高、货架期长的特点,说明冻藏条件比冷藏条件能显著抑制鲈鱼体内酶活性及微生物作用,缓解蛋白质分解,有效延长鲈鱼的贮藏期。3、研究鲈鱼在微冻.3℃贮藏条件下组织构造和流变学特征参数的变化,同时结合鲜度指标细菌总数、K值、TVB-N、pH值和感官特性判断其在微冻条件下的品质变化特征。结果表明随着微冻贮藏时间的延长,菌落总数、K值和TVB-N上升,pH值则先下降后上升;组织结构呈现肌原纤维间空隙逐渐增大,方向性增强,构造逐渐断裂崩解的趋势;弹性模量呈上升趋势,破断强度、硬度、弹性、粘聚性、咀嚼性呈下降趋势,而应力松弛时间、粘性模量的变化则不显著。与冷藏样品相比,微冻样品的货架期能够延长20天左右,说明微冻条件比冷藏鲈鱼贮运过程中理化和质构变化的研究条件能更有效的抑制鲈鱼体内酶的活性及微生物的作用,缓解长鲈鱼的贮藏期。4、鲈鱼保活贮运研究。对不同MS.2223.氨基苯甲酸乙酯甲烷磺酸盐麻醉浓度下鲈鱼的有效保活时间进行了确定,并对麻醉保活过程中鲈鱼营养物质、乳酸含量和质构变化进行了研究。结果表明麻醉保活过程中鲈鱼肌肉乳酸含量明显上升,而基本成分、组织结构及质构特征变化甚微。说明MS一222麻醉保活剂在未造成鱼体营养成分和肌肉组织构造变化的情况下,能较好的抑制鲈鱼呼吸强度和代谢强度,有效延长鲈鱼保活贮运时间。关键词鲈鱼;组织构造;流变学特征参数;保鲜;麻醉保活Stud i es on Phys i cochem l ca l Parameters and TextureChanges of Lateolabrax Japonicus Meat Dur i ng Storageand Transportat i onAbstractLateolabrax japonicus,which have nice flavor,tender texture,many medical andnutritional functions,is one of the economic fish in coastal and potamic area.In thispaper,the Lnteolabr锻japonicus Was chosen as the material and the followingresearches were crried out.Firstly,application of nonlinear curve fitting in analyzing stress.relaxationempirical data of food was studied.Compared with the successive approximate,nonliner curve firing was studied by analyzing the stress.relaxa矗oncarves of four kinds of materialsham,cheese,Lateolabrax japonicus and whelk.The results suggested that the nonlinear Cml“ve fitting could fit generalizedMaxwell model·The analytic results were steady,credible,and with a high fittingde莎ee.In addition,it had features of easy-operation and swiftness,which could beapplied in many kinds of materials.Nonliner curve fitting Was proved tohave advantages OVer the successive approximate for food with a highmoisture content and complicated viscoelasticity.Secondly,the quality and texture changes of Lateolabrax japonicus meat duringfrozen storage were studied.Tissue structures,texture profile analysis and changes ofrheological propertieselastic modulus Eo,stress-relaxation time t l。viscosity r/1。rupture strength,as well as the total number of bacteria,K value,T、厂B.N,pH valueand senso巧scores were determined.The results suggested that the total number ofbacteria decreased,while K value and T、倡.N increased with the extension of storagetime.As the storage time extend,the space of the myofibril increased.the tissuestructure deteriorated,elastic modulus局increased,and rupture strength,hardness,springiness,cohesiveness and chewiness decreased,while viscosity r/,andstress-relaxation time tl had no significant changes.Compred with that ofthe growth ofmicroorganisms,SO that it could alleviate the decomposition ofprotein.As a resulg partial freezing storage is all effective to extend the storage timeofLateolabraxjaponicus.Finally,keeping alive of Lateolabrax japonicus was studied.The live time ofLateolabrax japonicus Was confirmed in different concentrations of anestheticMS-222.The primary components,lactic acid,texture profile analysis and changes ofrheological properties in different alive situation were investigated.The results wereshown that lactic acid increased with the extension of keeping alive of anestheticMS-222,while primary components,tissue structures,texture profile analysis andrheological properties had no significant changes.It showed that anesthetic MS-222could effectively inhibit the respiration intensity and metabolic rate of Lateolabraxjaponicus,SO that it could effectively extend the carrying time.
